Crockpot Chicken Noodle Soup

 Ingredients:
– 1 lb boneless, skinless chicken breasts
– 8 cups chicken broth
– 2 cups sliced carrots
– 2 cups sliced celery
– 1 medium onion, diced
– 3 cloves garlic, minced
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– 1 bay leaf
– Salt and pepper to taste
– 8 oz egg noodles
– 2 tablespoons fresh parsley, chopped (optional)

 Instructions:
1. Prep the Ingredients: Start by dicing the onion, slicing the carrots and celery, and mincing the garlic.
2. Add to Crockpot: Place the chicken breasts at the bottom of the crockpot. Add the chicken broth, carrots, celery, onion, garlic, thyme, rosemary, bay leaf, salt, and pepper.
3. Cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and the vegetables are tender.
4. Shred the Chicken: Remove the chicken breasts from the crockpot and shred them using two forks. Return the shredded chicken to the crockpot.
5. Add Noodles: Add the egg noodles to the crockpot and cook for an additional 20-30 minutes on high, until the noodles are tender.
6. Serve: Remove the bay leaf, taste and adjust seasoning if necessary, and stir in fresh parsley if using. Ladle the soup into bowls and enjoy!

– 4 cups chicken broth
– 1 teaspoon salt
– 1/2 teaspoon pepper
– 1 teaspoon dried thyme
– 1 cup heavy cream
– 1 cup shredded cheddar cheese
– 1/2 cup sour cream
– 4 slices bacon, cooked and crumbled (optional)
– Chopped green onions for garnish (optional)

Instructions:
1. Prep the Ingredients: Dice the potatoes, onion, celery, and carrots. Mince the garlic.
2. Add to Crockpot: Place the diced potatoes, onion, garlic, celery, and carrots in the crockpot. Add the chicken broth, salt, pepper, and thyme.
3. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes and vegetables are tender.
4. Blend the Soup: Use an immersion blender to blend the soup to your desired consistency. If you prefer a chunkier soup, blend only half of the mixture.
5. Add Cream and Cheese: Stir in the heavy cream, shredded cheddar cheese, and sour cream. Cook for an additional 15-20 minutes on low until the cheese is melted and the soup is heated through.
6. Serve: Ladle the soup into bowls and top with crumbled bacon and chopped green onions if desired.

– 2 cups water
– 1 can (15 oz) tomato sauce
– 1 can (14.5 oz) diced tomatoes
– 2 tablespoons tomato paste
– 1 teaspoon dried basil
– 1 teaspoon dried oregano
– 1/2 teaspoon dried thyme
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 8 lasagna noodles, broken into pieces
– 1 cup ricotta cheese
– 1 cup shredded mozzarella cheese
– 1/4 cup grated Parmesan cheese
– Fresh basil or parsley for garnish

Instructions:
1. Cook the Meat: In a skillet over medium heat, cook the ground beef or Italian sausage until browned. Drain any excess fat.
2. Combine Ingredients in Crockpot: Add the cooked meat, diced onion, garlic, broth, water, tomato sauce, diced tomatoes, tomato paste, dried basil, oregano, thyme, salt, and pepper to the crockpot.
3. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours.
4. Add Noodles: About 30 minutes before serving, add the broken lasagna noodles to the crockpot. Stir to combine and cook until the noodles are tender.

– 1 packet ranch dressing mix
– Salt and pepper to taste

– Sliced avocado
– Chopped cilantro
– Tortilla chips

Instructions:
1. Cook the Meat: In a skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat.
